Groundnuts, also known as peanuts, are the seeds of the Arachis hypogaeaplant.  Despite its name, groundnuts are not really nuts by definition, but rather legumes.
Peanuts grow underground in fibrous, woody casings.  Each casing usually contains a pair of large, tasty and nutritious seeds (up to 50% fat and 30% protein).  Peanuts contain an abundance of vitamins and minerals, including Vitamin B1, B2, B3 and B6, zinc, potassium, phosphorus, magnesium, copper and calcium.  Their caloric content is high.
In Israel, peanuts are often consumed as roasted snacks; however, their other uses are reflected in the oil industry (oil produced from the seeds is edible), in margarine manufacture, at fish canneries, in various sweets, flours and even the soap industry.
The sorting of shelled and unshelled peanuts is performed according to color and size, and they are marketed under a number of categorizations characterized by shell color and size.
